Winemaking

The Charmat Method of producing sparkling wines is the most suitable vinification method for crafting Prosecco, giving it the natural sparkling character while emphasizing the fresh, fruity flavors. The wine, with the addition of sugar and selected yeasts, ferments in a stainless steel tank at a controlled temperature, reaching a pressure of 5.2 / 5.00 bar at 68°F. This gives the wine its characteristic fruity flavor and a fine mousse of small, long-lasting bubbles. The result is a light, delicate sparkling Prosecco.

Winemaking

After the grapes are harvested in early September, the winemaking process begins as all the grapes are separated from the stems and soft-pressed. The must is immediately separated from the skins and put into steel tanks for fermentation. Fermentation is controlled at about 64°F for 15 to 20 days. After fermentation, the wine is treated, decanted, filtered and refrigerated in order to prevent tartaric precipitation — a process taking a minimum of one month. The aging in steel tanks is for a minimum of two months. Before bottling, the wine is passed through sterile filters.

Winemaking

Our winemaker takes great care in the winemaking process starting with the gentle handling of the grapes, moving through the fermentation and bottling practices and, finally the aging and release of the wine. His philosophy is to blend wines that are always clean, balanced and elegant. The Spirito d’ Italia Tuscan Red grapes were harvested between the end of September and the middle of October for optimal ripeness. After harvest they were separated from the stalks, crushed, and placed in stainless steel tanks for fermentation, which is controlled at 78-82°F, for 10-12 days, with regular pumping over to extract maximum flavor. The wine was then clarified and filtered, expertly blended and bottled while fresh.
